Thai Fish Cakes

Ingredients

  • 1500 gm Red fish – rouge (fillet)
  • 50 gm Green prawn (peeled and veined)
  • 5 cloves Garlic (peeled)
  • 250 gm Shallot (broinoise)
  • 250 gm Green shallot (fine sliced)
  • 250 gm Green bean (fine sliced)
  • 15 gm Red chili (chopped)
  • 250 gm Ginger (julienne)
  • 2 bn Coriander (washed and chopped)
  • 20 ea Lime leaves (washed and chopped)
  • Coconut cream
  • Sambal olek
  • Palm sugar
  • Fish sauce
  • Lime juice

COOKING INSTRUCTIONS

Blend fish, prawns, and garlic in blender. Once fine, slap the mix against the side of a bowl for 10 minutes until smooth. Add remaining vegetables.

Season to taste with remaining ingredients – coconut cream, sambal olek, palm sugar, fish sauce, and lime juice.

Mould with clean and wet hands into fish cakes.
