Spiced Roasted Prawns

Ingredients

  • 12 Green King Prawns
  • 100 gr Coriander seeds
  • 100 gr Cumin seeds
  • 30 gr Dried chilli
  • 60 gr Fennel seeds
  • 30 gr Garlic
  • 2 whole chilis (cut in half and seeds out)
  • 150 ml olive oil

COOKING INSTRUCTIONS

Chop garlic roughly and fry until lightly golden, set aside.

Wash spices and roast in a dry pan, grind in a mortar and pestle or spice/coffee blender until powdered.

Combine together with Garlic, Olive Oil and chili.

Take whole prawns and cut along backs with scissors. Leave in the shell and marinate for at least a few hours.
