Soak chick peas over night.
Boil chick peas until soft, drain and preserve the cooking liquid.
Combine chick peas, tahini paste and garlic into a food processor,add lemon juice and blend to a smooth paste.
Season with salt and add enough cooking liquid and process until creamy.
Spoon hummus into a platter, swirl with a knife, drizzle with olive oil, sprinkle with cayenne and garnish with coriander leaves.
