My name is Hamish Neale, I’m a chef.I’ve been a chef for about 25 years with 30 years of experience in various kitchens. I was always around food catering, restaurants, and hotels. As a kid, I spent a lot of time traveling because both my parents were busy managing their businesses. In high school, I headed off to work at my father’s hotel after school. Soon after, I attained a Trade Certificate focused in Professional Cookery from TAFE Queensland Brisbane.
Foods I enjoy are dishes around the Mediterranean, along the coastline of Europe, Southern France, Spain, and North Africa. A lot of my inspiration for foods come from those flavors and ingredients those countries use. I describe my cooking style is very relaxed. Simple techniques but executed well with good quality seasonal ingredients. My fellow chefs would describe me as creative and funny. It’s always good to have a laugh you know after service or downtimes during prep. My theory, if my staff is happy, better food is cooked and served. People who eat the food from my staff and me, they can taste the passion and love put into it.
